		<description>Hi, I was just browsing the internet looking for a good, healthy banana muffin recipe and came upon your website.  I have not had very good luck with internet recipes but I needed to use up my ripe bananas. This recipe is excellent!!!  I altered it again by cutting the sugar even more (I used 1/3 cup of sugar and two packets of Splenda) and replaced the egg with two egg whites.  I also used four bananas.  And just a foot note; the recipe is pretty much "Idiot-Proof."   I accidently added the baking soda and baking powder to the wet mix (I wrote out the recipe quickly and listed the ingredients all in one grouping and just assumed it was part of the process!!  I was able to make 32 magnificent, moist mini muffins!!!  They will be great for snacks!
