Awesome Banana Muffin Recipe
These are by far the EASIEST and BEST Banana Muffins I have ever tasted! Even if you think you can’t cook, they are 100% “fool-proof” which makes them all that much better! With only 8 ingredients (which you probably have on-hand) I am sure you’ll agree these are super easy. See for yourself in the feedback! There are over 1000 positive comments – if that’s not good feedback, I don’t know what is!

Banana Muffins (makes 12 muffins)
3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)
1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
1 slightly beaten egg
1/3 cup melted margarine or butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour
Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 350 degrees F oven for approximately 20 minutes. Enjoy!
*These are much more flavourful the next day, and they freeze very nicely too!
*Also, if you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH! Yum

Absolutely simple and foolproof indeed! I’ve made different variations and they all came out great: varied the types of flours (whole rice flour was best, also corn flour!), substituted applesauce or yogurt or peanut butter for the butter, added different kinds of nuts, chokkie chips… my all-favorite is opening a few of pouches of chai tea and mixing it with the dry ingredients…. yummmm, banana-chai muffins!!! I’m glad Google search took me to your site!
needed to use up some really ripe bananas…made the muffins, quick, easy and tasty! Should have used walnuts, but its Sunday in France and nothing is open on Sundays! Next time!!

My family loves these muffins! They are so fast, and easy to make that I find myself making them weekly now. I love that you can add whatever you want to them. We love them with blueberries and my son’s favorite is with chocolate chips too. Even if you can’t bake a thing, you can make these muffins.

Made these just before. Didn’t rise as much as I thought they would but this is because the shapes in my muffin tin were short and wide rather than tall and narrow. They tasted great, and really moist.

These really were delicious. I sprinkled brown sugar on the top of some and added chocolate chips to others. They were a huge hit with my very picky eaters!
made these muffins a few times have been experimenting…and just i thought these muffins couldn’t get any better…it happened…now my friends and family think im an amazing cook hehehe havent introduced them to my secret yet…Christmas is coming up and here in New Zealand CAT CAN COOK books aren’t sold…so ill have to let the “CAT” out of the bag lol

they are in the oven now…. except i put the whole cup of sugar in, so we shall see. the batter is very sweet but lovely. i havent got walnuts so used a mix of milk and white choc chips. cannot wait!

I just made a double batch of these amazing banana muffins and added butterscotch chips instead of the the chocolate chips… They are SOOO good. My house smells like heaven and I can’t wait for my husband to try these tonight when he gets home! He’s going to think I’m a genius! LOL!

Oven timings and temperature would have been more handy as well as metric weights. Waitig for the results in assme around 25 mins!!
I only had two bananas. I substituted 3/4 cup sour cream. Used half a cup of sugar and some honey. Scrumptious!
Im Actually making these mufffins right now. There in the over. I hope there good. I have a speet tooth so I put 1/2 Of brown sugar and 1/2 a cup of white. I also Used butter.

They seem to be cooking fast? The outside tin part is already brown and it’s been about 5 mins? I’ll Just keep checking and see what happends.
I’ll Post later When I get the chance to eat them. (If my family doesn’t eat them first.)

Great basic banana muffin recipe. So simple to follow, and really lovely to eat.
I added a good handful of walnuts to the banana bowl, and good sprinkle of nutmeg to the dry bowl.

If you don’t have any baking soda on hand, I found that an extra teaspoon of baking powder worked in a pinch.
I substituted half a cup of flour with oats to give it a faux nutty texture (my roommate is allergic to nuts) and it worked out well)
I love these!! My son does not eat gluten so we used corn flour and applesauce instead of butter and they turned out fantastic!!!

I just fiddled around with the recipe, here is what I did, 2 egg whites instead of 1 egg, 1/2 cup olive oil instead of butter, 1/4 tsp of salt, 1 cup white flour, 1/2 cup whole wheat flour and then 1/2 cup dried cranberries. Now that should be a bit healthier. Thanks for the basic recipe.

Hi. I saw that you said that you can substitute other fruit for the bananas. How much would you do? I have apples that I am trying to use up. They were delicious with the bananas and just wanted to try other fruit. Thanks.:)

Hi there Sharon! Yes, you can use either apple sauce, or grated apples (I have done both and both are so yummy) as well as many other fruits. In terms of the measurement of the fruit, I would guess about 1 1/2 cups. I tend not to measure when I bake recipes that I make often, but I think that amount should be fine for these muffins. Just remember, if using sweetened apple sauce, cut down the sugar in the recipe.

These are absolutely the best muffins around. These muffins are why my daughter’s second grade class think I am “the greatest cook in the world!” By cutting down on the sugar-I think they make a great morning snack. I like to make them for the whole class.

Fantastic! I managed to mix things in all the wrong order on accident and still they were great! I added cinnamon, used soft brown sugar instead of white, and also used 5 bananas. (I have problems with often making super dry muffins). Boyfriend is very happy I have finally used up all the frozen bananas I have been collecting!! Am taking this recipe to teach to my friend who also collects bananas and doesn’t know much about baking.

I’ve just started supplying homemade cakes at my husband’s office building which the receptionist sells at and amazing rate. Today I took some of these muffins in and whilst I was having a coffee upstairs with my hubby, word spread quickly and the muffins sold out in a record time of 22 minutes and people were looking for more.This recipe has already found pride of place in my recipe book, awsome indeed!
