Baked Tilapia with Tomatoes, Herbs and Feta

Fish is the ultimate brain-food. It’s rich in vitamins and high in Omega-3′s. Generally it’s just really good for you. What makes fish totally fab, is that it is also low in fat and calories, so dig into this delicious dish guilt-free and enjoy a healthy flavourful meal that might even make you smarter too ;-)

Baked Tilapia with Tomatoes, Herbs and Feta

4 Tilapia Fillets
1 tomato, diced
1 clove garlic, minced
1/4 cup olive oil
1/2 tsp oregano
1/4 cup fresh parsley, chopped
1/4 cup red onion, chopped
salt and pepper
1/3 cup feta cheese

Place fish fillets in a shallow baking pan. Combine remaining ingredients (except feta) and blend well. Spoon mixture over fish and bake at 425 degrees F for 20 minutes. Remove fish from oven, and top with crumbled feta cheese. Return to oven and bake for 5 minutes. Serve with mashed potatoes or rice pilaf and steamed vegetables.

    Oh my GAWD! This looks AMAZING! Can’t wait to try it! I have been looking everywhere for something like this to spice up plain ol boring fish :)
