We make chicken stock everytime we have a roast chicken.  We freeze the carcas and pull it out about three days later to make stock - then it gets strained and we put some carrots, grated ginger, orzo/rice/noodles, and we have another meal.
Alternately, I can freeze some of the stock for making risotto.</description>
