Got turkey leftover from Christmas? No problem! Make it into this simple, fresh and delicious salad. It’s light, tasty and healthy, so it kinda counter-acts some of the Christmas indulgences you may have been involved in this past week 😉

Light Turkey Waldorf Salad

2 cups cooked turkey meat, chopped
1 apple, diced
1 cup grapes, sliced in halves or quarters (depending on preference)
2 ribs of celery, diced
1/4 cup light sour cream
1/4 cup light mayonnaise
1 tsp honey
1/3 cup pecans, chopped
Squeeze of fresh lemon juice
Salt & pepper to taste

Combine all ingredients in a medium bowl, and mix well. Serve with crusty bread.
