Cornflake and Ice Cream Dessert Recipe

As a young child, my piano teacher Mrs. McAsh had the best recipe for an easy frozen treat. She gave my Mother this wonderful recipe, and she made it often! I remember it once feeding an entire audience at a church variety show. Now there’s a picture. I wonder how many pans of the dessert were needed to feed the crowd that evening!

At any rate, this is easy, and good. Try it, you’ll agree!

Mrs. McAsh’s Ice Cream Dessert

1 Cup Brown Sugar

1/3 Cup Butter

3 Cups Cornflakes Cereal (whole, not crushed)

1 Cup Chopped Nuts such as Walnuts

1 Box Vanilla Ice Cream Slightly Softened (I use Chapman’s)

Combine all ingredients except ice cream and press half into a pan. Slice the ice cream about 1/2 inch thick into as many slices as you can get out of the carton and lay slices over the mixture. Sprinkle the remaining mixture over the ice cream as topping. Freeze.

Cut into uniform squares, and serve.

Antipasto Recipe

Yolanda’s Antipasto

This is a wonderful, traditional and easy recipe for making your own Antipasto.  This family favorite recipe comes from my Aunt Yolanda, and has been a wonderful addition to many family dinners.

6 Medium Size Green Peppers (chopped fine)

1/4 Cup Olive Oil

1 Can Mushroom Pieces

1 Small Can Pimento

20 Green Olives

20 Black Olives

1 Jar Green Pickle Relish

1 Jar Chili Sauce

10 oz. Ketchup

2 Cans Tuna

Cook peppers and mushrooms in the olive oil 10 minutes. Add everything but the tuna and bring to a boil, stirring often. Add the tuna, and simmer 10-15 minutes.

Place into sterilized jars.

Can be stored 3-6 months in the refrigerator.

Best served on crackers!

Cream of Broccoli Soup Recipe

My Brother Michael recently came up with this wonderful recipe for Broccoli Soup, and I wanted to share it here! While I haven’t yet tried the soup, it got rave reviews from my family members. Enjoy!

Cream of Broccoli Soup


2 small red onions
2 small or 1 large bunch of broccoli
1/8 stick of butter
125ml flour
1l milk
250ml water
1 boullion cube (chicken or mushroom preferred)

Dice onions and separate broccoli into small flowers.
Peel broccoli stem and dice.
Sautee onions & broccoli 3-5 minutes.
Add water and boullion cube and allow to simmer on low heat.
In a large saucepan melt butter.
Stir flour into butter and cook for 10-15 seconds stirring constantly.
Add milk a little at a time, stirring constantly and allowing to thicken.
Add vegetable & stock mixture.
Simmer on low heat for 5 minutes being careful not to burn.

One Weird Little Bird!

We recently adopted a new little bird from our local Freecycle here in Guelph. She was in need of a new home, and given that we have “experience” with budgies, my heart spoke to me and said “you must adopt this little bird!” She came to us with the name “Fluffers” and although it is a *cute* name, I have since changed it to Skye, as she is the most beautiful shade of blue mixed with white (the clouds) What a little beauty.

I will say though, that she is one odd duck, or Budgie rather. She has some strange habits, and I am not certain if these are her so-called tricks, performed for our benefit, or if she is just playing to amuse herself and pass the time. In any case, her latest spectacle this evening included poking her body in and out between the bars of her ladder, getting stuck mid way through (picture Winnie the Pooh) and making a very annoyed sound…then doing it again immediately following. This pattern was repeated at least six times that I witnessed. I know birds are not overly gifted with intellect, but this game seems rather ridiculous and maybe even a bit painful.

Skye has brought me so much joy in this first week, and I do treasure her very much already. It is amazing the fondness for an animal that seems almost instant. One week in, and she’s stolen my heart. It was this time last year, that our little Kiki passed away, and although Skye does not take her place, she sure has brought back some of the fun and antics I had missed in having two birds. Our resident geriatric bird, Toby, also seems quite taken with the new girl in town. While we have always made an effort to be especially attentive to our guy who will turn 9 this year, Skye has given him something new and interesting to look at!

A house full of animals, kids, plants, and the happiness and mess they all contribute to on a daily basis, but you know, I wouldn’t have it any other way.

Okay, okay so I am a few days late posting this wish to all of you, but as I always say “better late than never!” I guess that 2008 is off to a busy start…surprise, surprise!

I want to start by wishing all of you a year full of love, blessings and happiness, and great new beginnings for 2008…

I am hoping that this year will bring a fresh new start in so many aspects of my life. There are many things I want to accomplish this year…hopefully, these will be realities by the beginning of 2009. I am not sure I want to “share” all of my years aspirations, but will “squirrel” a few of the most important ones away in my mind, and of course, share them as they (hopefully) unfold this year.

Scottish Shortbread Recipe

This Scottish Shortbread Recipe (no, it’s not Scotch as some like to say) is soooo easy!!! I was skeptical when made them yesterday, as they seemed to good to be true, but they are so tasty, and so easy! I swear, I think my 3-year-old could make these himself if only he could read! :-D

Truly decadent and buttery, these melt-in-your-mouth cookies are sure to be a crowd pleaser this Christmas! I took them to a church gathering yesterday, and they were gone quickly!

Scottish Shortbread

1 Cup White Sugar

1 tsp. water

1 Pound Butter, softened

4 Cups White All-Purpose Flour

1/2 tsp. Salt

Put sugar in bowl, and sprinkle with the teaspoon of water. Cream in butter until well blended. Add flour and salt, and mix in until the mixture is crumbly. Press into a 9X13 ungreased cake pan, and poke holes about every inch or so. Bake in a 275 degrees oven for 1 hour, until top edges are a light golden colour. Cut into squares with a pizza cutter. Yum!

Febrile Seizures: Information for Parents

Yesterday was simultaneously the worst and best day ever. The entire story of how the day unfolded could be told in many ways, all of which would take quite a long time, but I will sum up by saying in short, that Gwyneth had a Febrile Seizure, and it was the scariest thing my husband and I have ever witnessed!

I wanted to provide parents with some information on Febrile Seizures, what they are, and how to cope if one happens to your child. The paramedics and doctors all told us the same thing “they are so much more scary to witness than they are to experience” but that almost seems like cold comfort after seeing the condition of our young daughter yesterday morning.

Febrile seizures occur most commonly in very young children, usually between the ages of one year and six years of age. They usually come on suddenly following the rapid increase in a fever. The fever does not necessarily need to be extremely high, but it is the actual sudden increase that appears to cause them to happen.

There seems to be more instances of Febrile Seizures within families (there are seizures on both sides of our family) and eventually, they are outgrown.

In Gwyneth’s case, she had two “mini-seizures” as I have been calling them, followed later by a massive Febrile Seizure in which she went limp, shook, bubbled and twitched at the mouth, and briefly, stopped breathing and turned blue! It was absolutely horrific to witness, helpless as I waited for the 911 dispatcher to talk us through how to cope until the Paramedics arrived (which was simply to place her in the recovery position until help arrived)

She seems so much better today, after some tests and many hours at the hospital yesterday, accompanied by prayer from concerned family and friends, all of whom I want to thank from the bottom of my heart. I am so very blessed to have such wonderful people in my life. The phone didn’t stop ringing yesterday with offers of help, and prayer. God Bless all of you for that!

I am keeping a close eye on her however, in case this is to happen again. I sure hope not!
