This salad is even better the next day or 2. That's part of what I love about it. There are very few salads that you can keep as leftovers if not all eaten right away. If you take it to a Potluck Dinner (as I have many times) you probably won't have much left tho. My daughter calls it Cholesterol Salad (for the eggs, bacon & mayonaise). I call it a good way to get them to eat their veggies.

Thanks for that. We're having a little potluck party next week, kind of for Xmas I guess and I've been trying to find something special to take.. found some awesome ideas at this potluck recipe site. You know, someone should invent a website where you can write what you'll be taking, and it would make sure no one is bringing the same thing!

Wow, looks like I'm in this game late :)

I don't even know if anyone is going to see this comment.

But I was just surfing around looking at different ideas for 7 layer salad recipes and there was your blog!

The Water Chestnuts look like a great addition to this salad. That would add some serious crunch and freshness.

Great idea, I think I'll use it next time!

You like chicken right? Here's my fave chicken recipe: (hey if you're sharing, why can't I? ha!)

3-4 pieces of chicken (I use boneless breast)

1 package onion soup mix
1/2 cup ketchup
1/4 cup brown sugar

Mix soup, ketchup and brown sugar together. Pour over chicken. Wrap tightly in aluminum foil, cook in oven for 35-40 minutes at 350 degrees.

Smells amazing and tastes delish!
