Vegan Oatmeal Raisin Cookie Recipe

I just realized last night that this cookie recipe, which I’ve been making for years, is in fact, vegan friendly! I’ve recently been trying to incorporate a lot more veggies into my diet, and while there are no veggies in these cookies (thank God!) they are free of all animal products, and you likely have everything on hand in your pantry to make them right now! They are simple and yummy, and take about 5 minutes to prepare. I often double the recipe, to make a larger batch to freeze – a great time-saving trick. You never know when you’ll need cookies to take with you someplace!

Vegan Oatmeal Raisin Cookie Recipe

1/4 cup shortening
1/4 cup margarine
1/2 cup brown sugar
1 tsp vanilla extract
1/2 tsp baking soda
2 tsp hot water
3/4 cup flour
1/2 tsp salt
1 cup rolled oats
3/4 cup raisins

Mix all ingredients well, and drop by spoonfuls onto greased or silicone cookie sheets. Bake for 10 minutes in 350 degrees F oven.

    TheVegan Oatmeal Raisin Cookie Recipe does not list any raisins in its ingredients.

    You are right Gloria!!! Don’t forget to add about 3/4 cup raisins right at the end before baking :o )

    What is the consistency supposed to be with these cookies. I’ve made them twice and the mixture is crumbly. And I have to squeeze it for it to stay together. Should the mixture be more moist?

    Yes, I would add in a tad extra margarine Barbara….always go by feel!!
