Hiya everyone!Yep, I am still around – not on CCC very much these days, but you gotta eat, right? So, today my lovely pet chickens gave me some beautiful fresh eggs, and what better way to use them than in quiches? Here is the recipe in a nutshell (eggshell?) Cat’s Crabby Quiche (Makes 2) Preheat oven to 425 2 Frozen Pie Shells 8 eggs 1/2 cup cream 1 TBSP oil 1 C mushrooms chopped 1/2 green pepper chopped 1/2 onion, diced 1 small package Sea Legs (imitation crab) 1 cup shredded cheddar cheese Beat Eggs and cream in Kitchenaid or by hand until eggs are foamy. In a skillet, sauté onion, mushrooms and green peppers, until soft and then add in crab, and break into pieces as you heat. Once heated through, add to the eggs and cream mixture. Next add shredded cheese. Pour into pie crusts. Bake 30-40 min until crusts are golden brown.
