I have several recipes I’ve invented for chili over the years, I tend to just add in this and that as I find things in the fridge and cupboard. I think one of my favorite chili’s,   was the one I made tonight. Easy, low fat, great tasting…the perfect meal at the end of a busy day! It was fabulous with the fresh bread I also made in my breadmaker!   I thought I should take a picture of the meal, but honestly, it was gone so fast, I didn’t have a chance! An impressive and easy meal…freeze the leftovers for a meal next week!

Cat’s Chili Con Easy

1 Pound Ground Beef or Turkey

1 Onion, diced

1 Green Pepper, diced

6 Cloves Garlic, minced

1 tsp Chili Powder

1 tsp Cumin

1 tsp dehydrated vegetable flakes (Mrs. Dash or Clubhouse Seasoning type)

1 Large Jar Spaghetti Sauce

1 Large Jar Mild Salsa (I like PC Corn and Black Bean Salsa)

1 Can Baked Beans in Tomato Sauce

1 Can Kidney Beans, rinsed and drained

1 Cup Frozen Corn Niblets

Brown Meat along with onion, green pepper and garlic.   Transfer to a large pot, and add remaining ingredients, and allow to cook over low heat for several hours.   Serve with fresh baked bread, or garlic toast.

*hint* I also love to use cooked Butternut Squash in my chilis.   It adds colour and texture, as well as more vegetables towards our required 5 servings a day!   Just cook your squash as usual (microwave or oven) scoop out seeds, and spoon out the flesh.   Mash lightly, and add into the chili with the other ingredients, and simmer on low! Yum!
