I was sent this recipe today by one of my readers!   Thanks so much Jona for sharing this! I love getting e-mail, especially when it involves food 🙂

Feel free to send me *your* favorite easy recipes, and I will post them here on Cat Can Cook! I must try this one out soon – sounds delicious!

A few months back, I ran my first ever Cat Can Cook Recipe Contest – I will be posting about the next one tomorrow! Again, I will be calling for submissions of readers’ favorite recipes. They must be good, and above all *easy* The first prize will again be a piece of my hand made jewelry, this time, featuring some of my new handmade lampwork beads!

Stay tuned for more details tomorrow, and get your favorite recipe ready to submit!

Jona’s Easy Chicken Enchiladas

3 chicken breast (cooked, shredded)

1 can cream of chicken soup

1 can rotel tomoatoes

1 tsp cumin

1 tsp chili powder

1 tsp pepper

Torilla chips

Grated cheese of your choice

Preheat oven to 350.   Combine chicken, soup, tomatoes, and seasonings. In casserole dish, crush tortilla chips to make a thin layer on bottom of pan. Add layer of chicken mixture, add layer of cheese. Continue to layer until all chicken mixture is gone. Bake until cheese is melted. This is good the first night, but fantastic for leftovers!
