Simple, delicious summer grilling is at it’s best with this flavourful main – Enjoy!

Marinated Pork Skewers with Satay Sauce

Marinade

1 clove garlic, minced
1 walnut-sized piece ginger, minced
1 tsp lime rind, grated
4 TBSP soya sauce
1 1/2 TBSP brown sugar
salt & pepper to taste

1 fresh pineapple, cut into chunks
1 pound pork roast, cut into chunks

Satay Sauce

1 small can (5.6 ounces) coconut milk
4 TBSP smooth peanut butter
1 clove garlic, minced
2 tsp soya sauce
2 tsp brown sugar
pinch red pepper flakes

Mix garlic, ginger, lime rind, soya sauce, brown sugar and salt and pepper in a medium bowl. Add Pork pieces and marinate for at least 3 hours. Thread pork and pineapple alternating onto wooden skewers. Grill at medium heat on barbecue for 15 minutes or so until thoroughly cooked.

Meanwhile in a small saucepan, combine coconut milk, peanut butter, garlic, soya sauce and brown sugar. Whisk together and heat slowly. Keep warm until skewers are cooked, and serve as a dip alongside the skewers or drizzle on skewers before serving over rice.
