Easy Granola Recipe

I am addicted to granola! I LOVE the stuff, and we go through a box every few days around here…yikes! It’s not really as healthy as you might think – in fact, out of most breakfast cereals, granola is one of the highest in calories and fat! But, you can make your own, and modify it to make it a little healthier. Here is a basic recipe for you to play with!
Easy Granola

4 cups oats (not quick oats)
1 cup wheat germ
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 cup to 1-1/2 cups of nuts (unsalted almonds, walnuts, pecans or seeds like sunflower seeds)

1 cup raisins, dried cranberries, or other dried fruit
1/4 cup oil
1/4 cup honey
1/2 teaspoon vanilla or almond extract

Mix dry ingredients together in a large mixing bowl.
Place liquid ingredients into a small sauce pan and warm on a stove on medium low. Stir until combined.
Pour liquid mixture over dry ingredients and stir well until dry ingredients are coated.
Spread mix on a cookie sheet and bake at 325 degrees for 30-40 minutes until golden brown, stirring every 10-15 minutes to prevent burning.

After you’ve cooked and cooled granola, keep it in a relatively airtight container.

    I am so excited to try this recipe! Can you tell me approximately how much granola this recipe yields? Oatmeal raisin cookies disappear at lightning speed around here, so I would love to have another variation of that to have around the house for healthy (and not to mention high fibre!) snacking.

    I am making this again… it was awesome last time and it didn’t last long either. One question, do you put the brown sugar in the pot with the liquid ingredients to melt all together? Forgot how I did it last time. Thanks!
