Don’t you just love wraps? I mean, talk about versatile – you can do just about anything with them and they are always totally fabulous, fresh, and fast! The perfect summertime meal, be it lunch, dinner or just a snack.

After a friend mentioned fish tacos the other day, I was inspired to make my own. I’d made shrimp tacos before, but fish tacos were a totally new idea! So, I made up some fresh salsa and guacamole and added a little fish in a soft taco. It was the perfect easy dinner! Here’s how I did it:

Fish Tacos

1 small fillet of mild fish like Basa, tilapia, or cod (cooked and cut/flaked)

3 vine ripe tomatoes, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1/4 cup red onion, chopped
1/3 cup cilantro, chopped
1 TBSP olive oil
salt and pepper

4 small whole wheat wraps
guacamole, sour cream or other garnish

Cook fish and set aside. Make salsa with the vegetables, olive oil, salt and pepper. Assemble wraps with fish, topped with salsa and guacamole and other toppings like sour cream, cheese..etc. Enjoy!
