Awesome Banana Muffin Recipe

These are by far the EASIEST and BEST Banana Muffins I have ever tasted! Even if you think you can’t cook, they are 100% “fool-proof” which makes them all that much better! With only 8 ingredients (which you probably have on-hand) I am sure you’ll agree these are super easy. See for yourself in the feedback! There are over 1000 positive comments – if that’s not good feedback, I don’t know what is!

They are extremely easy, and great tasting! So versatile…change them up and let me know how they turned out! You just can’t go wrong with this GREAT RECIPE! If you like them, leave me a comment and tell me about your muffin victory! :-)

Banana Muffin

Banana Muffins (makes 12 muffins)

3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)

1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)

1 slightly beaten egg

1/3 cup melted margarine or butter

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups flour

Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 350 degrees F oven for approximately 20 minutes. Enjoy!

*These are much more flavourful the next day, and they freeze very nicely too!

*Also, if you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH! Yum :-D

    These are the easiest muffins ever! They’re soooo good, so moist! My husband loves banana muffins, and these are his favourite! I made a batch tonight, and added some chocolate chips-I could probably eat the whole try myself, as they are amazing!

    YUM! These turned out soooo good. I have made a few recipes I found online and they never turned out..I had lost hope I would one day make a delicious muffin until I found this recipe! Actually I used 3 mini loaf pans..cooked for about 45 mins. :)

    These are VERY easy and wonderful. Because my hubby has an allergy to wheat, I used oat flour. In place of the egg, I used Chia seeds. That is the only thing I changed. The batter made 24 mini muffins and 6 regular size muffins. When hubby came home….. he ate 12 mini muffins in less than a 1/2 hour cuz he loved them. I will make them again!!

    Real easy to mix up and quick to put in oven. Made a double batch added nuts and chocolate chips left the other plain. eather way very good. outstanding recipe!!!:)

    Were very good. Kids have been gobbling them all up! I barely had any left over to save for the hubby at work, and the son in school! Added a bit of pure vanilla extract, dash of cinnamon, and nutmeg. Baked them in 8 mini loaf pan for about 35 mins in my convection oven at 325.

    I can’t cook. And I can usually find a way to mess up a recipe. But I’ve made these muffins a handful of times and they are always delicious. There’s a batch in the oven that my 4 year old helped me make that we’re eagerly awaiting!!

    I made these with my 4 & 5 year old, they did most of the work themselves(which proves how easy it really is). We kept the recipe the same, with the exception of crumbling some brown sugar on top of them before popping them in the oven. The muffins were a hit! Everyone wanted seconds :)

    Used some great product from KAF to bump-up these muffins. I like using whole wheat and oatbran flour as the base flour, and using their Whole Grain Blend with some great seeds in there …

    Awesome Recipe, Cat! We live in Costa Rica, and have an overabundance of Bananas in the wet season, this recipe takes care of that problem! Everyone loves them! We add Chocolate and Walnuts if we have them!

    These are so great when made vegan and gluten free! I used applesauce instead of butter and egg replacer in place of eggs and gluten free flour by King Arthur. I added Enjoy Life chocolate chips as well. I made them twice first time with coconut butter and second time with applesauce and the second batch rose well. Oh, and I also added some oats. Thanks!

    I used Organic Whole Wheat flour and brown sugar, and added a tsp of cinnamon to the mix. My husband can’t keep his hands off them!! Very tasty. :)

    Hi,

    I tried your banana muffin.After pouring in the moulds I found that my oven (mine is a fan assisted oven) has only upto 250 degrees. So I set it up at 250 since the receipe called for 350, It was kind of burnt.Could you let me know how much do we need to set up for fan assisted ovens.Thanks a lot.

    @Nathan. Your oven is marked in degrees Centigrade and the recipe is in Farenheit. 350F is about 180C but with a fan assist I would bake them at 160C. Hope you don’t get burned offereings next time!

    yum, yum, yum! i am making these again and this time i added flax seed! i cannot wait until they come out of the oven. i also use an egg replacer to make them vegan! delicious!

    Wow, so easy and useful i have made about 4 diffrent types this month. I added dates, dried apricots, ginger and nuts all delicious! also i used a little less sugar and wholemeal flour the last few times so i can call them ‘healthy’. YUM . simple great recipe! Thanks

    They are in the oven! i did change a few things,i used brown sugar instead of white as i like the taste more! Also i added brown sugar and cinnamon sprinkled on top of the muffin to make they crunchy on top!! :)
