I picked up a recipe card from our local grocers fish department, and made the following recipe.   It was so tasty, very impressive and also very healthy.   I thought it to be much like something you would get at a fancy restaurant, yet it was just as simple as can be to make at home.

Grilled Orange-Ginger Tilapia with Lime-Coriander Sauce

2 TBSP Olive Oil

2 TBSP Each of: Grated Orange Rind, Orange Juice and Finely Chopped Gingerroot

1/2 Cup Fresh Finely Chopped Corriander

Salt and Pepper

4 Fresh Tilapia Fillets

4 Thin Slices of Orange, Halved

1/2 Cup Fat Free Plain Yogurt

1/4 Cup Mayonnaise

1 TBSP Fresh Lime Juice

2 TBSP Olive Oil

Foil

In a bowl, stir together olive oil, orange rind and juice, gingerroot and 1/4 cup of the corriander.   Season with salt and pepper. Spray 4 squares of foil with cooking spray and place a fillet in the centre of each, topping with the prepared mixture of corriander and ginger.   Top each portion with an orange slice.   Wrap each fillet tightly with foil, and bake in preheated 400 degrees oven for about 20 minutes.

For the Lime and Corriander Sauce: Stir together yogurt, mayonnaise, lime juice and remaining corriander.   Season with salt and pepper, and refrigerate until ready to use.

Unwrap each fillet portion, and transfer to plate.   Drizzle with olive oil.   Serve with the yogurt topping.
