I love getting my copy of What’s Cooking Magazine every few months. In it’s pages are amazingly simple recipes for busy families – my favorite type of cooking.

Today, I am trying *my version* of the Salmon Cakes Recipe featured in the latest issue. These look absolutely delicious and possibly kid-friendly too? I guess we’ll find out during dinner!

As usual, I’ve altered the recipe to suit my taste, so I will write it down as I prepared it. I added in fresh herbs, celery and lemon juice.

Salmon Cakes

2 cans salmon, drained and boned
1/4 cup light mayo
juice of 1 lemon
1 package of Stovetop Stuffing
3/4 cup water
1 rib of celery, finely diced
2 TBSP fresh parsley
2 TBSP fresh chives
pepper to taste
2 TBSP oil for frying cakes

Mix all ingredients together in a medium mixing bowl. Heat oil in a large skillet and fry the cakes on each side until golden brown (5 minutes per side) Serve with a tossed salad and a sweet dressing such as sweet onion.
