Lemon Parsley Tuna Cakes

3 medium potatoes, peeled, quartered, boiled & mashed
1 small tin tuna, drained
1 small onion, minced
1 rib celery, minced
2 TBSP fresh parsley, chopped
1 TBSP fresh lemon juice
1 egg
salt and pepper
1/3 cup flour
2 TBSP oil

Combine mashed potatoes, tuna, onion, celery, parsley, lemon juice, egg, salt and pepper and mix well. Form mixture into 6-8 patties. Lightly flour each patty, and fry in the oil for 12-15 minutes, until golden brown. Serve with fresh lemon wedges.
