These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.


Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

After reading all the wonderful comments….I decided to make 3 batches at a go. Needless to say that it was wiped off instantly Its nice and easy and does not take time to cook. I sprinkled the tops with flaked almonds for extra crunch.
I ate these at a playgroup yesterday and they were the best I have ever tasted! Can’t wait to try making a batch today!
I’ve tried this recipe. it is just too sweet. is there any other wayb where by we can reduce the sugar?
Rhoda – if they are too sweet for you, you can further reduce the sugar, or omit it completely. I am certain they would still work fine 🙂
Try Splenda if you find them too sweet. Even 1/2 of what the receipe calls for.
Bananas are sweet in themselves so I would agree that you could probably omit the sugar.
This is an excellent recipe. I have added a cup of raisins, or used half bananas and half grated zucchini, or both, and the results are great. As advertised, they freeze well, and are good right out of the freezer, or thawed, or nuked. Thanks very much for this recipe.

love the banana muffin recipe. my son would eat the entire batch in one day, if i would let him! gave some to a neighbor once and her kids loved them too. her daughter has a nut allergy so it was nice to have a safe after school treat. so i decided to make a double batch today and gave her half. way to go cat! my son and i love pumpkin too so i’m going to try it next. : )
My partner and I really like these muffins- and, like many of the people who left comments, we’re trying to be more health conscious.
I amended the recipe to include 3/4 cup whole wheat flour, 1/4 cup flax seed (food processor ground), and 1/2 cup white flour. I also added 1/2 tsp. baking powder to ensure that they rose.
Delicious and guiltless. The dogs have been following us around all morning in the hope a crumb will drop their way!
Use two eggs, separate and beat the whites to stiff peaks. Fold in at the end for a much nicer texture.
I tired what James Forbes suggested, the 2 egg whites and I added some wheat germ with pecans for one batch and walnuts for the other batch. My husband loved them.
I also cut down on the splenda.

Hi the feedback certainly sounds good. However, I am used to using weighed measurements and am a bit unsure about using ‘cup measurements’ do I use a big cup or a small cup or does it not matter so long as the cup used is the same? Thanks

I don’t know if I am the only one but I have been quite disappointed even though everybody seems to like those muffins. They do not taste like cakes but rather like bread. They taste “healthy” though.
Mido: Try the receipe with the 2 egg whites. It was from James Forbes, I believe was the author of that post. You’ll find that they do come out light & fluffy. I myself am fussy about bananas and I actually ate one and enjoyed it. Give them another chance and try a few suggestions posted here. I’ve added wheat germ as well for extra fibre.

Great Recipe! I never would have thought a simple recipe like this world turn out so well!. It’s inexpensive, easy and rather quick. Great tasting to. I however, swaped flour with wheat flour and used 1 cup of brown sugar instead of white sugar. Turned out great!.
These muffins are very quick and delicious. I arranged them on a Christmas tray and garnished with powdered sugar. Very festive. I was so impressed, I made a second batch substituting 2 large diced pears for the banana and adding a pinch of nutmeg and some chopped pecans. They are really delicious! It’s true they are even better then next day. We made them last night and enjoyed them with coffee this morning.
Just made these and they’re very good! I used Steve’s suggestion and subbed WW flour and 1 cup of brown sugar. I also added chocolate chips. Great recipe!
Best Muffins Ever!! I have tried several recipes, and have always been disappointed. I came upon these and thought I’d give it a go. These are moist and fluffy wonderful muffins. I only added just about 1/4c more sugar. Thanks this is a keeper, and I will use it often.
I love the original recipe, but I thought that I would try to tweek it a bit for my second try. I used 1/2 cup of white sugar and 1/2 cup of brown sugar, then I added a tablespoon of vanilla an orange zest… they turned out great! Thanks!
i just tried the muffins..they are delicious except that mine doesn’t seem to cook on the top with the stipulated timing….and they sank too…does tat mean i have put too much banana and too little flour?

Best muffins Ive ever tasted! Changes we made were used self raising flour instead of plain & just sprinkled in about 1/2 tspn baking powder to make sure of a good raise.
We added some white choc buttons broken up to use them up!
We sprinkled brown sugar on top of the butter in the muffin container. They tend to stick a little but the resulting toffee crunch at the bottom is well worth it!!

these are great and easy. i made 6 muffins and 2 mini loaves. i added nuts to the loaves but not the muffins. i always seem to get dry muffins no matter what i do but not this time.

This recipe is so simple, delicous AND versatile.. I usually make them vegan (just substitute flax for the egg and vegetable oil instead of butter) and I always add something like chopped apple and some cinnamon (sprinkle some brown sugar on top), or chopped almonds\dark chocolate chips and 1/4 cup of cocoa powder, those are my two favorite. I also use whole wheat flour. They come out fantastic every time.
I just made these- after 40 mins they were quite dark on top but gooey in the middle. Added self raising flour to the second half of the mix- a bit of an improvement but they still had a funny chemical tang.

Not to mention my whole family… Years ago i use to have a good banana recipie…. lost it in my moves… Have not found a good one since untill your recipe… It is a major Keeper..I usually dont write comments.. but you deserve a major thank you… I love carrot cake… I have not found any good ones…. so i am going to make it… i love raisens in it and just cant wait to make them in muffin form… will let you know…

MEOW! These are really easy! I added about 1/2cup of mashed up strawberries to ours and the kids couldn’t get enuff of them. Their going to try one warmed up with a little dob of ice cream tonight for dessert. My daughter thinks it will be kind of like a banana split but healthier. How can a mom say no to that?!

Ok so I made 48 mini muffins, 36 large and 2 small cakes. 24-28 bananas in all. All the kids (of which there are 7) liked them. The teenager said they were a bit like bread. I used raw sugar and added some guylain choc bits on the top. I’ll sprinkle some icing sugar tomorrow. BTW did anyone have trouble getting them to brown? I used a fan forced oven and put the oven at 170 dgrees celcius – we don’t use faranheit in Australia.
Just made these muffins with my 5 year old….. LOVE them, but I had to put ground nutmag,ginger and cinnimon……and made a loaf and added some blueberries, so good (I also added just under 1 cup of sugar)
LOVE THESE!!! this is the ONLY banana muffin recipe i use EVER!! i found it on here a couple years ago i think and have been making them ever since!@!! sometimes i will add some mashed strawberries or fresh bluberries or chocolate chips, and of course just as the recipe says, and they ALWAYS turn out awesome!!!!
