Starting today, and for the next while, I will be doing a series of recipe posts called “Manic Muffin Monday” As you probably have guessed, every Monday, a new muffin recipe will be posted! Today, it’s an easy recipe for Lemon Muffins!
6 TBSP. Butter
1 Cup White Sugar
1 1/2 Cups White Flour
1/2 Cup Milk
Grated zest of 1 1/2 Lemons
1/4 tsp. Salt
1 1/2 tsp. Baking Powder
Juice of 1 1/2 Lemons
1/3 Cup White Sugar
Preheat oven to 400 farenheit. Grease muffin tins, set aside. In a bowl, cream together butter, sugar and eggs. Add in flour, milk, lemon zest, salt and baking powder, mix well. Spoon batter into the greased muffin tins, filling them 3/4 full. Bake in preheated oven for 15-20 minutes. Meanwhile, combine the lemon juice and sugar in a bowl. When muffins are baked, prick the tops with a fork, and drizzle topping over each muffin!

Just made these muffins, and they are delicious.. However, I did add some extra touches such as a few drops of lemon juice (half a lemon) into the mix as I love a very lemony taste. Also when putting the muffin mixture in the tray I paused half way to add a tablespoon of warmed lemon curd (I used store bought Barkers, heated in the microwave).. and a table spoon of cream cheese! I moulded the the cream cheese into little disks ontop of the curd..then I poured on the other half of the muffin mix! Still had sugar syrup topping too, so you can imagine how rich these are. Delicious little treats though, only one needed!! 🙂
These muffins were amazing! They were incredibly soft and moist and super lemony! The drizzle just added a little more oomph to the taste, sort of making it a bit sweeter. They were absolutely phenomenal! Best lemon muffin recipe i’ve ever made!
ummmmmmm sorta forgot to add self raising flour so were quite rubbery…. silly me 😀

SOOOOoooooo good! I just made a slight alteration, instead of using 1.5 lemons for zesting I used 2 (why waste :P) and I put the juice from 1 of the lemons into the mixture after I added the eggs. And for the lemon sauce to pour over the top I only used 1 lemon, which was more than enough. If you use too much of the lemon sauce over the muffins they will become too stodgey and fall apart, so 1 lemon is enough if its a big one :). Made 14 decent sized muffins, very moist and flavourful but not too overpowering!

I made these and they are amazing… Instead of using regular sugar to make the glaze I opted to use powder sugar and made a lemon glaze with the juice of one lemon which was plenty. Also made these with oranges and YUM!!! thanks for the easy recipe

These are my most requested muffin. I double the recipe and use 4 large lemons worth zest. I also throw in a couple handfuls of blueberries if available. They freeze well too!
I dont have butter but i do have margarine is it ok to use margarine instead?
