Forget about healthy eating for this one! It’s a definite artery-clogger, but again, as is anything in life, it’s all about the moderation. So go ahead, indulge this morning – then hit the gym this afternoon!1/4 pound bacon or corned beef, thinly sliced or crumble
2 large potatoes, peeled, sliced and blanched (boiled for a few minutes only)
3 eggs, beaten
1/2 cup milk
Salt and pepper to taste
1/3 cup grated cheese

Saute the meat in a medium size skillet until cooked. Drain off most of the excess fat. Add potatoes, in a thin layer on top of the meat and continue to cook, covered, until potatoes start to feel tender. Add beaten eggs and milk, and whisk. Pour over potatoes and meat, place a lid on the skillet and continue to cook for about 10 minutes until it’s set. Sprinkle with salt and pepper, grate cheese on the top, and serve with toast.
