Easy Italian Breakfast Skillet

1 TBSP olive oil
1 clove garlic, minced
1 small onion, diced
1 small tomato, diced
1/2 cup leftover cooked bacon, chopped
6 eggs, beaten
1/2 cup parmeggiano reggiano, grated

In a large skillet, heat oil and saute garlic, onion and tomato just enough to heat them up a bit, and keep tomato firm. Add eggs and scramble. Add cooked bacon. Once combined, top with grated cheese and serve hot!
