Chilled Carrot Ginger Soup with Orange and Cardamom
Another delicious soup, invented in the Cat Can Kitchen
4 – 5 large carrots, peeled and chopped
1 large onion, diced
3 cloves of garlic, minced
2 TBSP margarine or butter
salt and pepper to taste
1/2 tsp ginger
1/4 tsp cinnamon
1/4 tsp cardamom
2 packets oxo or 2 bullion cubes
enough water to cover the carrots in a large stock pot
