Have you ever wanted to make homemade Mushroom Soup, but shied away from it because you thought it would be difficult? Well, fear not good foodies – I am here to help with another easy recipe that anyone can make! Honestly this recipe is so good, so simple and takes mere minutes from start to finish.

I played around with it and have come up with a delicious recipe for mushroom soup that is 100% delish and has some nice health benefits as well.  Did you know that mushrooms are high in vitamin D and also help to give your immune system a boost? Yep! Eat these guys up, folks! They are really, really good for you!

Simple Mushroom Soup

Simple Mushroom Soup Recipe

2 TBSP Butter

3 Cups mixed mushrooms, chopped (I use button, white, cremini, porchini, or shittake)

Salt & Pepper to taste

1 Large Onion, chopped

1 clove garlic, minced

2 TBSP Flour

4 – 5 Cups Whole Milk or Cream (or I prefer to use half milk and half cream) Alternatively, you can use soy or almond milk.

In a large pot, melt butter, and add onions, mushrooms and garlic. Add about 1 tsp salt and a dash of pepper. Saute’ the mixture on medium-high heat until the onions are golden and the mushrooms are thoroughly cooked (about 15 min.)

Reduce heat and add flour, and mix well to coat. Next, add milk, and whisk so that there are no flour lumps. Allow the soup to simmer on low, for about a half hour. With an immersion blender, blend a small section of the soup so that there are still lots of chunks of mushrooms and onions in it, but that it’s a nice creamy consistency. Sometimes, I add a little cream cheese for extra creaminess, too.

Serve with warm crusty bread and enjoy!
