Curried Rice Recipe

Curried Rice Recipe

1 TBSP oil
1 cup mushrooms, sliced
2 onions, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1 cup Basmati rice
1 1/2 tsp curry powder
1/2 tsp salt
raisins & toasted almonds (optional)

Saute the mushrooms, onions, and peppers in oil, over medium heat until softened. Stir in the rice, curry, salt and 1 1/2 – 2 cups water. Bring to a boil. Reduce heat, and simmer in covered pot for 20 minutes. Right before removing from heat, add raisins and almonds (if using) and stir.

    I LOVE this recipe! It’s not so easy to find quick vegetarian recipes that are also delicious!
