Easy Lemon Muffins

Starting today, and for the next while, I will be doing a series of recipe posts called “Manic Muffin Monday” As you probably have guessed, every Monday, a new muffin recipe will be posted! Today, it’s an easy recipe for Lemon Muffins!

Lemon Muffins

6 TBSP. Butter

1 Cup White Sugar

2 Eggs

1 1/2 Cups White Flour

1/2 Cup Milk

Grated zest of 1 1/2 Lemons

1/4 tsp. Salt

1 1/2 tsp. Baking Powder

Topping:

Juice of 1 1/2 Lemons

1/3 Cup White Sugar

Preheat oven to 400 farenheit. Grease muffin tins, set aside. In a bowl, cream together butter, sugar and eggs. Add in flour, milk, lemon zest, salt and baking powder, mix well. Spoon batter into the greased muffin tins, filling them 3/4 full. Bake in preheated oven for 15-20 minutes. Meanwhile, combine the lemon juice and sugar in a bowl. When muffins are baked, prick the tops with a fork, and drizzle topping over each muffin!

    I’m a complete novice when it comes to baking – but these were not only simple & quick, but tasted FABULOUS! My hubby couldn’t help himself – he ate two before dinnertime! Thanks – I’ll be trying some more of your recipes soon!

    these are the best me and my mum were having a cook off and we needed to use lemons and everything else was so hard but this was easy so thx oh and i won !!!! yah

    Just made these muffins, and they are delicious.. However, I did add some extra touches such as a few drops of lemon juice (half a lemon) into the mix as I love a very lemony taste. Also when putting the muffin mixture in the tray I paused half way to add a tablespoon of warmed lemon curd (I used store bought Barkers, heated in the microwave).. and a table spoon of cream cheese! I moulded the the cream cheese into little disks ontop of the curd..then I poured on the other half of the muffin mix! Still had sugar syrup topping too, so you can imagine how rich these are. Delicious little treats though, only one needed!! :)

    These muffins were amazing! They were incredibly soft and moist and super lemony! The drizzle just added a little more oomph to the taste, sort of making it a bit sweeter. They were absolutely phenomenal! Best lemon muffin recipe i’ve ever made!
