Zesty Chicken Salad with Cilantro

I invented this today for lunch, after we had left-over chicken breast left over from Pad Thai yesterday. It was very tasty, so I wanted to share it here:

Zesty Chicken Salad with Cilantro

3 Boneless, Skinless Chicken Breasts, Chopped fine

1 Small Onion, Chopped fine

3 Cloves garlic, Minced

1 Cup Cilantro Leaves, Chopped

3/4 Cup Light Mayonnaise

Dash of Salt and Pepper

1/2 tsp Lemon Zest

Combine all ingredients in a medium sized bowl. Mix thoroughly. Serve on Wraps with greens.

    This Chicken Salad is PHENOMENAL!!! I love chicken salad, but this is so flavorful, nothing else compares! I will admit, I’m new to the whole cooking thing, and didn’t trust myself with the chicken breasts, so I cheated and used canned shredded white chicken (in water, then drained) I served it on whole wheat pitas, DELICIOUS!
