Wondering what to do with all your left-over Christmas turkey? Well, this actually uses turkey sausage, but I suppose any turkey meat would work just fine. In case you’re wondering, a gumbo is something between a soup and a stew, and very yummy!
Easy Turkey Gumbo Recipe
1/4 Cup Vegetable Oil
1 Pound Turkey Sausages, cut into rounds
1 Small Onion, chopped
1 Red Pepper, chopped
2 – 3 Cloves Garlic, minced
4 Cups Chicken Broth
2 Cups Canned Plum Tomatoes and their Juice
1/2 Cup Long Grain RIce
1 tsp. Dried Thyme
1 pkg. Frozen Okra, thawed and sliced
Salt and Pepper to taste
Hot Sauce, Tabasco Sauce or Cayenne Pepper to taste (depending on how spicy you like it)
Heat oil in a skillet. Brown Sausages, and set aside. Add onion, garlic and red pepper to the skillet. Cover and simmer for 5 minutes. Add broth, tomatoes and juice, rice and thyme and bring liquid to a boil. Return the sausage to the pan, and simmer until the rice is cooked (15 – 20 minutes) Add okra just to heat, and add seasoning sauce and salt and pepper. Enjoy!
Gumbo is a great way to make the perfect use of turkey left-overs! Basically what ever ingredient you put into it, you get some sort of gumbo recipe! People experiment with what ever ingredients they have in the kitchen, and that is how new gumbo recipes are born!
