When we went to the Rainforest Cafe in Toronto to celebrate our daughter’s 3rd birthday, I had the “plant sandwich.” It was roasted portobello mushrooms in a wrap with lettuce and sauce. I thought it was pretty good, but as usual, I left thinking about how it was made and resolving to make my own *better* version at home. This is what I’ve come up with.
1 zucchini, thinly sliced
1 medium onion, sliced
1/2 cup fresh button mushrooms, sliced
1 red pepper, cut into strips
2 TBSP olive oil
1/2 tsp salt
dash of pepper
2 pitas, halved
2 TBSP Italian dressing
3/4 cup mozzarella cheese, shredded
Preheat oven to 450 degrees F. Place all veggies in a large bowl, and toss with oil, salt and pepper. Spread over a baking pan, and roast for 8 – 10 minutes until vegetables are tender. Divide veggies between pitas, and top with salad dressing and cheese. Return to oven for 2 minutes until cheese melts.
