Decadent Chocolate Shortbread Recipe

Decadent and rich buttery cookies? Oh YES! Chocolaty, soft and delicious? Oh YES! Easy to make, even for the novice baker? Of course!!!

Decadent Chocolate Shortbread Recipe

1 cup all-purpose flour
1/4 cup sugar
1/4 cup unsweetened cocoa powder
1/2 cup butter (you may need an extra spoonful – if the dough is too dry)

Combine all ingredients (you will need to get your hands in there) until well mixed and it forms a dough. On an un-greased cookie sheet, spread the dough out, and flatten as much as possible – use a rolling pin to make it nice and flat if needed, but you may have to flour it a little so it doesn’t stick to the dough. With your hands form the flattened dough so that it is somewhat square in shape. Prick the dough all over with a fork. Bake in preheated 325 degrees F oven for about 20 minutes. Allow to cool and cut into squares with a pizza cutter.

I tried this and it came out alright except it was extremely crumbly. The shortbread wasn’t soft, it tasted okay but it easily crumbled even as I lifted it with a spatula. This made it impossible to cut into squares because it would crack and break apart as I used the pizza cutter. Did I do something wrong? Is there a trick?

Just as a couple variations – I used honey instead of sugar, and found that they were not crumbly at all! I also dropped them by spoon as small cookies instead of squares, and that also worked very well.
Delicious cookies, great with a cup of tea! Thanks for the recipe!
