Welsh Cakes

I’ve never made these before, and when I came across this recipe tonight, I thought it seemed like a fun one to try for our breakfast in the morning! Use fancy cookie cutters in your kids’ favorite shapes to make them a special treat.

Welsh Cakes

2 cups flour
3 tsp baking powder
1/2 cup shortening
1/2 cup white sugar
1 cup raisins or currants
2 eggs mixed with a small amount of milk

Mix the dry ingredients, then cut in shortening with a pastry blender. Add raisins. Beat eggs well and stir into dry mixture, adding in enough milk to make the dough soft. Roll out dough on floured surface to 1/4 inch thickness, and cut with cookie cutters. Cook on a lightly greased griddle on the stove-top  (like pancakes) and turn over only once. Serve warm with butter and preserves.
