AMAZING Black Bean Burgers

I was up visiting my parents today, and when it came time to prepare lunch, my Mom had an idea to try out a new veggie recipe she’d found. So we took a pretty basic Black Bean Burger recipe, and made it fabulous, flavourful and colourful! I also whipped together a herbed mayo to go with it. The burgers were a huge hit! Here’s what we did to make them taste great.

                                                                                Veggie Black Bean Burgers

1 can black beans, mashed
1 carrot, grated
3 potatoes, grated (we used 2)
4 scallions, chopped (we used 2)
1/4 cup cilantro, chopped
1/4 cup fresh parsley, chopped
1/2 cup bread crumbs
1 egg
1 cup corn
1 clove garlic, minced
salt and pepper to taste
oil for frying

Mix all ingredients, except the oil, until well combined.
Shape the mixture into patties. Heat about two tablespoons of olive
oil and cook each patty until the burgers are done, about 3-5
minutes on each side, until golden brown.

Herbed Mayo

3 TBSP mayonnaise
3 TBSP sour cream
1 TBSP each: fresh parsley, cilantro
1 clove garlic, minced
1/4 cup grated cucumber
Salt & Pepper

Mix all together, and serve alongside burger patties, or serve on large crusty buns as traditional burgers.
