So, I decided to come up with a brand new recipe for my book launch – and seeing as I’ve already made *hundreds* of cookies, what’s a few dozen more? I invented this recipe, basing it on my chocolate chip cookie recipe which is to die for! These have all the makings of the perfect holiday cookie: coconut, cranberries, pecans and white chocolate! Delish! Here’s how to make them:
White Chocolate Chunk, Cranberry, Pecan, Coconut Cookies
(Bookie-Cookie) 😉
3/4 cup white sugar
3/4 cup brown sugar
1 cup margarine
2 tsp vanilla extract
1 egg
2 1/3 cups white flour
1 tsp baking soda
1/2 tsp salt
1/2 cup shredded coconut
3/4 cup dried cranberries
1/2 cup white chocolate, cut into chunks
3/4 cup pecans, chopped
Heat oven to 375 degrees F. Mix the sugars together, and cream in margarine til smooth. Add vanilla and egg, and stir well. Stir in flour, soda, salt, coconut, cranberries, white chocolate and pecans. The dough should be firm. Drop dough by rounded TBSP onto silicone (or regular greased) cookie sheets, and gently press to flatten slightly. Bake about 8 minutes until edges are starting to get lightly browned.
